I always have an appetite for lentil soup! Chopped raw cabbage to the side. Under 200 calories for the meal; good protein and vitamin A. Make it a sunshiny day ☀️☀️☀️!

Thanks Wifey! I used my instant pot and started with a box (36 oz) of low sodium veggie broth. I let that start simmering as I added 2 carrots (chopped), 6 garlic cloves(minced) - you could use less, onion (chopped fine). Added herbs 1/4 t oregano, 1/4 t Rosemary, 2 bay leaves. Then 1 c uncooked lentils (I use brown). I let that simmer about 5-10 using the glass lid so that I can see it. Then add 1T tomato paste and 1.5 c diced tomatoes (I used plum and sometimes Canned). You could let this all simmer about until lentils are cooked (about 15 minutes in the IP or 30-40 min on the stove- then add 2 c of finely chopped kale or spinach, etc. I put my greens in a food processor. This makes very generous servings for four. Extra servings can be frozen for a ready meal for another time. It sound like a process but the main thing is to prep and measure out the ingredients and set aside. Then everything flows.
