gorgeous raw food?

Thanks, HBC! Yes, this is raw. I nuked the zucchini for 1 minute, and I think that the temperature was still low enough to quality as raw. This was my first time having raw asparagus. They were surprisingly tender and tasty. I used lemon juice as a dressing.

Vegetables are interesting. There are some that are best eaten raw because heat destroys their nutritive value and others should be cooked/roasted to make their nutrients bioavailable. Good old Google waiting in the wings for the next question.

This is beautiful. I sometimes zap produce that's been in the fridge for 30 seconds to warm it up and bring out the flavor. I don't consider it cooking, but who knows.
