We went out for Thai food last night. I tried to order the best I could. Had vegtables and chicken and they said they lightly used oil but dk. Making lasagne tonight so we shall see how it all plays out on scale. I can see how tired I feel in this picture.

Morticia, Thanks. I'm doing pretty good at keeping my weight around 130 so even though I expect a gain as I will be having some lasagne tonight, I'll adjust during week as needed. 💜

You look beautiful as usual! Lasagna sounds good! I have a roast, potatoes and carrots in the crockpot.

You don't look as tired as you did in one of your previous pictures. I'm glad you are doing better. Since you don't snack on junk like I do I wouldn't worry about temporary weight gain from real food!

Have you ever made eggplant lasagna? You make it as usual but instead of noodles you use sliced eggplant or zucchini . It is excellent and you don’t miss the noodles. Not a diet food, but a “lighter version” of a favorite dish. Small tweaks over time.

Your meal sounds yummy too!💜 Fritzy, thank you😘 I haven't made lasagne in a very long time so I'm looking forward to it💜 Kenna, unfortunately eggplant is one of the few things my husband and I don't like. For me it's a textural thing. I have done zucchini lasagna but even though I drained it well, it was still wet ..💜 losingtown , thank you. We just got home from church and I'm resting a bit, watching football with hubby.💜🏈🏈

Diana—- with both eggplant and zucchini, I put them in a colander, sprinkle with salt and let them sit about half hour. To draw off some of the moisture. Then put them on a cookie sheet and roast at about 450 for 10 minutes to further remove some moisture. Then proceed with the layering. I make my own sauce so it is THICKER than most commercial marinerasauces so it is not watery.

Aww wifey..you make me blush! Again last night I did not sleep well. I woke up again at 210 am and finally got out of bed at 4am..Ugh..maybe 3rd night will be the charm!!!🥱🥱🥱🥱 Kenna, roasting would probably help for sure. I will try that next time. I did the salt and drain method. I took make my own sauce, although Rao's is a good jarred sauce in a pinch.💜 Storm, thank you. I love Thai food as well

Happy you are feeling better and that you can get out & enjoy a meal at a restaurant. I also love Thai food, and it certainly does not sink like a brick like Mexican and some other foods I like. As long as I eat smaller quantities of rice (and no fried rice), then it is OK for me. Keep recovering. You are doing well !!
