I think that many people don’t understand that when it comes to vegetables there are many that require the application of heat in order to release their nutritive value and those whose nutritive value is destroyed by heat. Conversely there are those that should be eaten raw and others that should not because our digestive systems cannot adequately process them. You might be surprised and a little dismayed by those that many of us eat all wrong. Use your GOOGLE skills to look up this subject if you are interested and prepared to be amazed.

I learned about this years ago but my husband and I both are picky in our own way and we often only like vegetables fixed a certain way. Such as I don't like raw onion nor cooked spinach. I don't like tomatoes raw or cooked.

We are crazy lost on this, Kenna. I can tell you with, i suspect, 90 percent certainty, nobody is going to google that. But I'm fascinated but your assessment and hope I'm doing the right thing with the veggies I employ.

I eat many vegetables both raw and cooked, depending on how I'm serving them, so I think I'm benefiting from most.

Kale is a good example— eaten raw it can I terfer with thyroid function. Not a major deal for most folks but if a person has thyroid problems to begin with or a history of thyroid cancer that might be a consideration. Steaming kale is the least damaging way to “cooks it,but boilin or otherwise cooking (adding to soup) destroys a good percentage of its nutritive value. Some of the same issues applied to spinach. Spinach is best eaten cooked because it releases the nutritionist from the plant. Nutrition is complicated.

I need to learn to proofread better before I hit the send button. How hard would it be to build an edit button into this. If FB can do it, FS should be able to do it. I don’t think they have made any upgrades to this program since they rolled it out.

I love all vaggies except eggplant. I eat both raw and cooked. I think I'm covered but thanks for info, I didn't know that about kale. I do try to stay away from nightshades as I have Hashimotos disease and have flare ups quite often. I have however been reading that the nutrients in nightshades outweigh the inflammatory issues so who knows?!

Draglist—boy don’t I know how lost a person can become in all of this. I have been my healthier eating lifestyle for more than 30-35 years. Fortunately I love learning and going to school. The take home for me is to eat to support any medical issues that might exist and beyond that, moderation in most things. For every pro you read on any given “diet”, on the very next page you will find an article that says this same diet will kill you. Weight can be lost on any diet, but the long term sustainability and healthy aspect is a completely different story.
