Made a delicious, high fiber, high protein breakfast to start the day!
I call it Mexican style breakfast burrito.

1 Ole Extreme Wellness high fiber tortilla
2 eggs
2 slices thick cut bacon - cooked crisp
1/4 c. black beans, rinsed/drained
1/4 c. diced onion
1 tbsp diced yellow pepper
2 tbsp habenero fire salsa (you can use mild if you don't like hot)
1/4 c. shredded mexican blend cheese (optional)

Cook the bacon crisp. Remove to paper towels. Wipe out "most" of bacon grease from pan. leave a tiny bit. Saute onions and peppers for a minute or two to desired tenderness. Add little bits of water to help de-glaze pan. Add black beans and salsa and heat through. Crumble crisp bacon in pan. Whip up the eggs (no fat added)....add eggs to veggies and bacon and scramble. Cook to you egg "doneness" liking.

Remove scrambled mixture to bowl. Turn down the heat. Place tortilla in warm pan for couple minutes to heat up/slightly toast tortilla.

If using cheese - remove tortilla to plate - sprinkle cheese on tortilla. Add egg, bacon, veggie and salsa mixture to tortilla. Wrap up and enjoy!

With 3 slices bacon or 2 slices bacon and 1/4 c. cheese - this yummy burrito is still under 500 calories and is high fiber, high protein, low carb.

You can mix it up and use couple slices of avacado instead of cheese....or add a tbsp or two of sour cream.

If you are not a bacon fan...try 1-2 oz chopped panchetta, ham, sausage or chorizo. Just remember to factor in the difference in calories/fat.

I have found even left over steak or pork chop diced up...makes good omelet filling.
