Still out here experimenting. Sunny side up eggs with mashed purple yam. I think these are also called Ube…different from purple sweet potatoes and Okinawan sweet potatoes. These are very rich and sweet and used for desserts mostly. Love the colors!

Yes it is ube. That’s like the unicorn 🦄 root veggie here in Florida. You’re so deserving of it. When I find it I will plant 🌱 some on my garden.
