Kenna Morton's Journal, 10 February 2022

Today’s cooking endeavors included Icelandic Rye bread and chocolate mousse pie. The Rye bread was an inspiration from another member who posted her picture. Different in that the loaf pan it is baked in has a lid on it to ensure a nice flat top for sandwiches. I won’t cut into it tonight to taste but will taste on Sunday . The pie however turned out great.

The CruSt was just a Marie Callender’s deep dish frozen pie crust. Really, I cannot make one any better than this. The filling is really simple—— pioneer women. Ladd’s chocolate pie is the recipe name. Just GOOGLE it. It comes right up.. just took a few minutes to whip up the filling on the stovetop and let it cool. Thanks it. Not an oven pie so no baked topping. Whip cream it is.

The numbers I used for the pie calorie count just come from the database. I love this pie but would not eat it often because it is really rich. My serving was 1/10 of the pie and that was plenty .

This is Icelandic Rye Bread. Another member posted a picture of hers and it looked really good, and different so decided to try it. I haven’t tasted it yet but am going to tonight. I’ll trport back.

Both look so delicious!! I love rye bread, but have not had Icelandic. I’ll have to check for a recipe.

Bob’s Red Will is where this recipe came from and also the site where the origional poster got her recipe and inspiration from. Very easy and quick. Tasting it tonight. I’ll give it a quick review later

Ok— update! The Icelandic Rye BREAD IS A WINNER. Absolutely delicious and so easy. I didn’t do the nutritional breakdown on it but I will now that I know I will be making it again. If you decide to make it, be sure to watch the video.

I saw the post earlier in week about this bread and I was curious. What makes it different? Pie looks so yummy!!!!

Very dense so that it will slice well into sandwich bread. Sweet background because of the hone and molasses combination, but a definite rye flavor. On Sunday it will become small ham and cheese sandwiches.

The pie is very rich and very yummy. I consider a serving to be 1/10 of the pie.
