Panko and herb encrusted baked chicken

Each chicken strip was about 100cals a piece. But look around I know there are lower calorie bread crumbs out there. Also you can add cheese into the marinade, before you roll in the panko crumbs.

Chicken breast cut into stripes, marinated in olive oil, light butter, green onions,and white vinegar. Then rolled in a Panko and herb mixture.

Ingredients
6 servings progresso panko bread crumbs (about a 1-2 cups)
10 servings olive oil spray (or you can use regular olive oil, didn't have any at the time)
1 serving land o lakes light butter
1 1/2 servings white vinegar
1 1/2 large chicken breast
1 clove garlic clove
1 stalk green onion

Seasonings: Garlic powder, minced garlic, onion powder, minced onion, Lowery's seasoning salt, salt, pepper, dash of italian seasoning.

Directions

1. Preheat the oven to 450. Grease baking sheet.

2. Mix diced garlic clove, green onion, light butter, olive oil and the vinegar in a medium bowl, add the chicken breast stripes, and makes sure they're all coated throughly and let sit.

3. In medium bowl mix panko crumbs, and all the seasonings. Then roll each strip in the crumbs, pressing to coat evenly.

4. Place the coated chicken stripes on the baking sheet, and place in the preheated oven for 30mins, until gold brown.

Mmmm Panko! That recipe sounds great for fish too. I have a ginormous pack of tilapia begging to be cooked. :)

If you try it let me know how it comes out. :) The chicken was fantastic! We also had mash potatoes and green beans with it.

My 20 month old loved them. :) And shes really picky about meat. They come out crispy, and she's all over the crunchy crispiness. XD lol.
