I last ate on Tuesday, a beautiful dinner salad at 8pm... I had not done a fast longer than dinner one night, miss a day of eating and then break the fast at lunch the next day - basically 41 hours. This week, since I am going away for 12 days next week, I decided to give 2 full days a Go! It is now the day where I would eat at lunch, but I feel SO good it's crazy! I have ZERO hunger, Lots of energy, a great attitude, a smile on my face and just all round awesomeness. I NEVER felt like this when I had a McDonald's breakfast with orange juice, etc... I feel light, my whole stomach/abdomen area is almost like it's asleep, no noises, no hunger, no gas, no rumbling, incredible.

That being said, I started alternate day fasting after Christmas, almost a month ago. Yes, initially, that 2nd night I was Hungry, it was hard to sleep but I could do it. I truly feel I have built up some "Fasting Muscle" making it easier than if I had just jumped in. Knowing that my body has accepted that there is no food coming in and has now confidently turned on Fat Burning (absolutely IMPOSSIBLE if there is Insulin floating around - stimulated predominantly by ANY Carbs), it's fantastic. If you simply restrict calories every day/diet, your body knows food is coming, and you continue to spike insulin and your body will not break into the fat vault, effectively having zero impact on healing insulin sensitivity and lowering your metabolism to burn less since you are taking in less. If on the other hand you STOP eating, your body says, OK, need food... Well with 100lbs to initially lose, there is a year's worth of food on my body buffet... Lol.

OK, let's forget about weight loss, which was my ultimate goal, I feel better right now typing this, on a boring January day, than I have for YEARS. I just want you all to know how great I feel... One of my staff just commented that my insane bitchy mood swings have evened out and i'm like a ship on calm waters now :) Here is a photo of the sunrise on Lake Ontario last Monday. To look like that it has to be Super cold. I wish you all success, after searching for 18 years, I truly feel like I have found the elusive "Magic Pill".

Today was another eating day. I spent a lifetime indulging in every carb and sugary treat I could get my hands on, had a hard time driving past any McDonald's and melted into all possible Venti Lattes with an Oat Bar and Coffee Cake on the side... Sigh... ok, onto the good news with low carb eating and the wonderful internet I am able to find recipes that still keep my comfort side happy, while trying lots of low carb/healthy alternatives, I may not have in the past.

Tonight was a recipe by Carrie Brown, Montana Hash, but instead of potatoes, cauliflower. Like I said previously, I'm no chef, and love the idea of a one pot meal. As you can see from the groceries, this is a pretty solid, simple and nutritious low carb meal. It was super yummy.
