I spent all day yesterday finding recipes that I think I would like. Now today I am trying to create a week meal plan. It is so difficult. But, why?! Everything serves 4 so I just figured I could eat it every other day. Basically because I know no one else will eat it. It is not loaded with grease and yummy goodness. But, that grease and yummy goodness is the reason why I need to lose all this weight. I just hope I like it when I make it. I am a pretty good cook and baker. I don't doubt my cooking skills. I just worry if it'll taste good and if it will fill me up. I am trying to keep my carb count around 20 and my calorie intake around 1200. By the time I get to 20 carbs..my calorie intake is too low. URGHH!! Seems like I have to keep adjusting. But I know this will take a few weeks to get it down. Then hopefully it will be easier sailing with this.

Today I've spent most of my day planning. Planning this change I will not say diet because it is NOT a diet. It is a change. Somehow when I keep telling myself it is a change it seems easier. I've read all I think I need to know for now on a low-carb diet. But, I still feel so unprepared! It may be me actually thinking "can I really do this and stick to it?". I don't exactly have the biggest support team. My boyfriend is wonderful support. We both decided to lose weight in January. He has lost over 20lbs. However I have lost 5. I am so discouraged sometimes. I work so hard I exercise 5 days a week. I eat smaller portions and healthier food but I feel like it is not enough. I am a food junkie a carb lover. I know this will be difficult at first. But I need the change.
