Hello Fam,
This weeks accidental low-carb gourmet meal comes from my brain. Seriously. Stop laughing. I was kinda sitting around, thinking about what kinda food I really like and I remembered I really like portobellos, which is good because they are very low carb. So after having them on my salad this week I decided to stuff them for dinner.
Now I've had stuffed portobellos before but they haven't had all the things I like in them at once. Like I may find a recipe for spinach and cheese but no meat, or the recipe has meat in it but no veggies,,, not exactly what I wanted so I decided, what the heck, I would make all the ingredients I like and stuff them in a portobello, viola -- my super-tasty portobello mushroom recipe. Since you all know me you are well aware that I really have no idea what spices taste like and I just use what I may have heard you guys mention in the past, this lead to a very successful meal (thanks Allen!)
The wild cards were sauteing the meat, which worked out much better than I expected and sauteing the garlic. I must have had the fire too high because the garlic became little hot projectiles flying all over the kitchen and me, AARRGGHHH!!!! That's what I said when it hit me but then I took the pan off the stove and started over. Remember, if you use garlic in a jar, try and squeeze the water out before you add it to the oil and heat it all up together. Adding wet garlic to hot olive oil is not the answer to life's problems.
Now, I've arrived at the end of my low-carb week two and I am surprisingly happy, and well fed, which is probably why I am happy. I have not weighed in for this week but I am happy to report that I can now zip/button three jackets that I could not zip/button two weeks ago. I've even worn two of them to work :) Next weeks add-ins include cabbage, which I need because while I do love squash, I won't make it to the 1/2 marathon on squash alone and baked catfish with butter sauce, because everything is better with low fat land o'lakes. Wild cards include a scallop recipe I found and lamb chops. Scallops just because I have the ingredients but the lamb chops because they are the only meat in my freezer that isn't some form of poultry or a sausage. Plus I have cauliflower that I need to mash before it goes bad :) Btw, I have no recipe for lamb, just gonna wing it,,,
I have albuterol so I am off to the treadmill this week. Wish me luck and Bon Appetite from your random low-carb cooking friend.
