I've spent the last week educating myself about low carb dieting and I have to say..I've become a believer. Last week I endeavored to make small changes and cut my daily carbs to less than 100g per day while I figured out what I was doing. I noticed an immediate difference in my cravings because the increased protein had me so full. I barely got over 1000 calories per day. In the meantime I read "
Living the Low Carb Life
" and learned about 14 of the most popular low carb diets, the benefits, how they work, and how to match the right one to your lifestyle.
This week I've grocery shopped with a much better idea of what I'm doing, and have cut my carbs down to 50g per day. So far so good! Last night (Monday) I came in at 46.2 net carbs. Today I came in at 37 but for dinner we went to a Chinese buffet for my nephew's birthday and it was really difficult to count. I limited myself to sauteed vegetables, one bite of egg foo yung, and sauteed shrimp and beef with broccoli and mushrooms. I did indulge in a single crab rangoon but skipped everything else fried and skipped cake and ice cream. I have no idea what my carb count was today but I'm still satisfied with the day. I've also lost a few pounds in the last week and a half which is certainly keeping me motivated.

After reading nonstop the last few days about eating a low carb diet, I've decided I'm going to try it. I weighed in at Weight Watchers tonight and had a 2.4lb gain. I know I'm to blame for it, I ate out 4 times this past week. Something really needs to change. I'm going to spend the next week or so learning all I can about making the change to low carb and picking out the places where I really need to make adjustments in my diet. I've got plans for pizza and cake for my 40th birthday and then I'm doing it.

After many years of being on and off WW with minimal success, I'm about to embark on a new way of eating. Tomorrow I am starting the Insulin Resistance diet which will consist of linking every carb I eat with a protein. I can eat no more than 30g of carbs per meal. For every 15g of net carb, I must eat no less than 7g of protein.
My hope is that this will help my PCOS, take me off of my diabetes medications, and most importantly increase the chances for me to get pregnant.
