Hi everyone!
Thanks for the support the other day, I really needed it! I have bone broth and also the chicken that went in to make the broth so I can make other stuff with that.

My bone broth was made from celery top and bottom (save the middle for other stuff), a couple of onions cut in half, several carrots, 2 quarters of chicken, pepper. Bring to a boil and then simmer for at least 6 hours.

The biggest thing I am surprised about is the natural salt flavor w/o adding any. It is so good and filling.

I also made coconut fat bombs, which were a pain in the neck to make, but I decided it was worth it. I have a Fat Bomb cookbook. It takes a bit to collect the ingredients and then I had to buy a fairly cheap food processor (Hamilton Beach from WalMart) to grind up the ingredients. I have a Ninja but that wasn't made for that (tried it), tried my mini-chopper (not powerful enough). It really is an expensive item to make b/c that coconut oil, vanilla powder, swerve, etc really isn't cheap. But it is a good "candy" type snack when you are dying for something and it has the good fats and kills your hunger.

I would like to start doing more on the weekends physically. That's why I tried to do those aerobics but I don't think I can hack it right now with these knees and ankle. So I am going to make an effort to do the hiking again.

Missed your post the other day. Glad you seem to be pulling out of the funk. Doing something productive and positive (making the coconut fat bombs) is a good way to not lose sight of the good we are doing in our own lives. Keep pushing and fighting. Good luck.

I had homemade bone broth today, too:) I added a little chicken meat, and some kelp noodles. It satisfies me very well until supper time. I made some low-carb pumpkin fudge/fat bombs last week; didn't care for them to eat, but love one in my coffee!

i just looked up those kelp noodles. Interesting idea! I looked those up on amazon - hardly any carbs -- good deal @Warren I love soup!! @Matt thanks for the well wishes!

celery is often used to salt processed foods so that is why you are getting a nice flavor from your bone broth.

It's high in potassium too. Good stuff. (and good stuffed - with almond butter)
