Slowly Making Progress! Getting closer to breaking that 160/150 barrier. Got up and made some banana oatmeal cookies first thing. Thursday cycling with the girls tonight and it'll be handy to have a healthy snack if needed. Basically 1 lg. ripe banana, 1/4 cup walnuts, dash salt, dash cinnamon, and small drops of vanilla. Drop tablespoons full onto parchment and pat till thin with finger. Bake 350 for at least 20 mins. I like to try to dry out as much as poss. so I will keep adding time, lowering temp until desired doneness. I've never written this down before. Its just a healthier way to use bananas than my fave banana muffins with cream cheese frosting (yeah I know sound tasty). But these are pretty tasty too and take the edge off. Happy Thurs. everyone!
