My goal this week is to add more variety to my menu. Don’t think boiled eggs and yogurt for breakfast everyday are going to keep me going on this journey.
259.2 lb Lost so far: 1.8 lb.    Still to go: 109.2 lb.    Diet followed reasonably well.

Thinks for your support. Does anyone have any ideas for meal prepping for the week?

Over the last year I’ve come up with a few prepping ideas that work for me. Maybe they can work for you. Every few days I peel a pineapple, remove the seeds and peel a papaya, wash strawberries, raspberries, and blueberries, plus I keep a few bananas on hand, and with a little juice (I use mango nectar) I blend enough up for two mornings. I also eat the fruits as snacks a cup at a time or throw some on top of cottage cheese. I also make containers for what I call my “feta salad bar” every few days as well. I wash and spin lettuce and greens, shred cabbage and carrots, cut up peppers, and I put black olives, artichoke hearts and pepperoni along with everything else in small storage containers in the fridge. I make sure I have tomatoes, feta cheese, croutons, and salad dressing on hand and I set out my salad bar items from the fridge and construct a meal. It’s a lot of containers so I go with stackable and the kind I can see through to what’s in them. Hope that gives you a few usable ideas. 👋🏼😎 Good luck!🍀

Thanks for the tips jollyfox! How do you keep your greens from getting wilted when you spin it and eat on it for a few days?

Hi pj. I use a large glass storage container (with a tight fitting lid) so the leaves are not jammed in there and I keep it at the back of the fridge. Will last 3 days no problem. As time has passed, I’ve realized that I’m burning calories while cooking, so I started doing a lot of my salad bar chores every single night. But I have plenty of time and I’m highly motivated. Early on I would skip having my salad for dinner if I didn’t have it all ready to go in containers. Plus, I cook for 2, so the containers allowed me to just leave an empty plate and fork out with all the containers, and extras, and say, “it’s ready when you are.” Good luck!
