It may not be Friday, but today was a good day to make a frittata. Wow!!! The Tastes of Spain Frittata, I made today, was the best one yet. :-)

What's in a taste of Spain frittata?

I kept it simple. Eggs, Chorizo Dulce (sweet Spanish chorizo), red bell peppers, chopped black olives, green onions, fontina cheese, zucchini, smoked Spanish paprika, garlic powder, and a couple of tbs of Mojo Picon (pepper and tomato hot sauce), plus a bit of seasoned salt and a dash of ground black pepper. I would have used a Spanish Manchego cheese, but that's kind of expensive, and the fontina worked just fine. :-) I had an idea, I went with it, and it turned out great.

That does sound really good! Question- what is mojo picon? Is it marinade based like mojo criollo or is it a Sazon?

Smartygirl, as I haven't had mojo criollo, I can't really make the comparison. However, Mojo Picon is thick like a steak sauce, and actually reminds me, in taste, of A-1's Chicago Steakhouse Marinade.

I'm very familiar with Latin foods, but Spanish foods I'm not- only know Paella and Tapas! Thanks for the info, I'm going to look for some Mojo picon maybe at Wholefoods? Or World Market? But the Frittata sounds delish!! Gracias!!

Your welcome. Incidentally, Mojo Picon is one of the sauces used in Tapas, and this is actually my first time having it, and the chorizo dulce; as I usually get the Mexican chorizo.

Yeah, I also like Longaniza it gets crumblier (if that's a word lol..)
