Hello buddies! Busy start to a busy week. Worked an eleven hour day yesterday and wouldn't ya know my fitbit was almost dead when I was ready to head out the door. I left it home to charge and had to estimate a calorie burn for the day. I chose the burn I got last week on a day with similar activities.

This morning started with a dr appt. for my youngest. He has a plantar wart on the bottom of his foot that we are slowly freezing off. Then I ran to the DMV to renew my husbands registration only to be informed that unless I have a signed power of attorney I cannot renew the registration of a vehicle in his name... I was not a happy camper seeing as how I always renew the registration on both of our vehicles and have also renewed my moms before. Where is this coming from? She was a bitch. It's late, we forgot and I wanted to get that new sticker asap. Guess it will have to wait until he gets off work. Anywho, grocery store and now home. Did some quick cleaning, and working on a pile of laundry as tall as I am.

That pretty much sums up my day. I knew I wouldn't get to the gym Monday so I went Sunday instead, and I will be going again tomorrow morning.

I have class tonight and want to get some reading done before I go. The test is on Thursday. Never a dull moment around here it would seem. Maybe after graduation in June :)

Oh, I have a question. I made some egg rolls Sunday and they were yummy baked but lets face it, they're better fried. How many calories does frying add to a recipe?? I have no idea, and I was hoping maybe somebody here would.

My suggestion would be to measure your oil before frying the egg rolls, then measure again when you're done. That'll tell you how much oil was absorbed and how many calories added. I think. :) You are one busy woman. Good luck on your exam.

Wow! You're busy! Hope it's all going well. @JMB3450 - Brilliant and what a dope I am! I never considered that when I've been frying in more oil than will be in the finished product (eg 1 tbsp Olive Oil stays in the ragu, none is discarded but patties are drained)
