Hey everybody! How are you? I hope that everybody had a wonderful Easter holiday and had so much delicious food and fun with family and friends! I am thrilled to report that our Easter was a success. As you all know, it was my first time hosting Easter. I really did not want to mess up the homemade macaroni and cheese! The cheese is too expensive. I wanted to get the recipe right. ;) It turned out to be fantastic! Additionally, I slow cooked the ham with pineapples, cherries, and brown sugar in the crock pot. That turned out great! I also baked some imported French croissants and prepared a cinnamon sugar whipped margarine to pair with the croissants. You definitely cannot forget the deviled eggs topped with bacon bits, the basket filled to the brim with candy, and a lovely HUGE cake from David's Cookies.

I am happy to say that I didn't gain weight over Easter. I definitely enjoyed the food, and I actually had way too much cake today. It's funny because I actually made a very sensible dinner of bacon wrapped chicken stuffed with a 3-cheese blend. It's a nice size piece of chicken so I always split it with my mom. I threw in some steamed mixed vegetables on the side. What a delicious dinner. I have to really take a picture of this sometime so I could share it with everybody. In fact, I think that I took a picture of this chicken before so I will try to find it. It is absolutely fantastic and 400 cal per serving (2 servings) in each chicken breast. Absolutely fantastic!

I wanted to also share that I really enjoyed having my family over here on the weekend. I really did not want them to leave. I implored them to stay an extra night, but they had to go back to their home.

I started this week off enjoying some time to myself on Monday afternoon. I went to America's Best, because I wanted to get my eyes checked out. I know that I need glasses, and I've always needed glasses. I just avoided it for 30+ years. Ha ha. What lit a fire underneath my butt was the drive to finally study to get my driver's permit and license. I know that I will definitely need prescriptive glasses. That was the first real motivation for me to get my eyes checked out and obtain a prescription. I am so excited to show my new glasses off! I made sure to pay for blue light protection upgrade. That is very important to me, because it seems I am always behind a screen whether at work or play.

I decided to also stop into Barnes and Noble to relax, rummage, and shop around for books. I can get lost in a B&N. I always loved reading and writing. I really prefer old fashioned bookstores, because I think that we should all support small business. I try to support small business whenever I can. I have absolutely nothing against B&N though. It is always bright, exciting, and engaging. There is always some category to lose yourself. I was very fascinated by the classic books, Chicken Soup series, and second language books. I would love to re-teach myself Spanish again. I am fascinated by the different languages from French to Japanese. It is very inspiring to branch out and study something as an adult as opposed to taking Spanish for 5 years while attending school and only concerned about earning the good grades. You don't fully appreciate studying a second language in school as you would learning on your own later as an adult. I enjoyed being around all of those physical books especially when I have an unlimited Kindle membership. I love the physical aspect of holding a book especially an older book. I love the old book scent. :) Of course, B&N doesn't sell used books. I wound up buying 2 Chicken Soup
books, Little Women, and The Catcher in the Rye. Of course, I stopped at Starbucks and enjoyed some delicious food and a dragon fruit beverage. Yum!

Thereafter, I went to Gabes and found some fantastic merchandise for my mom and I. I am starting to love Gabes. Has anybody ever been there? How was your weekend, everybody? It is so nice to be back on here to write and be a part of the community.

Happy belated Easter. Mac and cheese is great. It also fits into several extremely common “made-up food sensitivity” categories that people lie about because they are embarrassed to admit they are dieting, if they eat it outside of a holiday or weekend 😂. Since when did literally lying become more acceptable than dieting? This is what the world is coming to hahaha. I also <3 books, but don’t read enough anyway because I’m an excessive sleeper, poor time manager, and screen time addict 😂…working on it lol!
