Shiitake and Red Pepper Stir Fry…not too shabby!

I made a half recipe. Used regular soy sauce and went a little heavier with the shrooms and snow peas. I’d do it again for sure.
Ingredients
3 tablespoons low sodium soy sauce
1/2 cup low-sodium vegetable stock
1 teaspoon cornstarch
2 teaspoons sesame oil
1/2 pound shiitake mushrooms, sliced
1 red bell pepper, thinly sliced
1 tablespoon minced fresh ginger
1 garlic clove, minced
1 large carrot, grated
1 cup sugar snap peas or snow peas
2 scallions, chopped
2 cups cooked brown rice

Silent, been busy with work and maintaining my health for me…I don’t track my food anymore…there’s no need as my diet is perfect 😉. I still believe sugar, or foods that readily break down into sugars are the worst thing we can eat. Don’t get me wrong, now that I’m into a habit of eating healthy I can cheat from time to time. I still obsess about my food choices and although I just ate my dinner of brown rice stir fried with veggies in a black bean garlic sauce (lowest sugar content I could find in the sauce section of my local Asian food market) I am already planning my egg, miso and Natto breakfast for tomorrow. I distinctly remember you saying something along the lines of “try eating healthy and maintaining for 3 years and get back to me.” Well we’re on our way…thanks for the motivation. 🤜

I agree with you now. Eating a bunch of sugar is a bad idea for most people, even the ones who think they're getting away with it. Abdominal adiposity, stress on the pancreas and all that, not to mention justifying and prolonging poor eating habits. I was looking through your meal pics, you've been a real quiet success. I'm sorry I made fun of your squat, more weight isn't better, that's just dumb.

Yeah, I've seen all the low carb presentations, years ago. Can't recall them exactly now.
