I've read advice from people who study the microbiome that you should eat 30 different plant species every week. Not as hard as it sounds, as grains, beans, fruits, veggies, nuts & spices all count. Regardless, whatever you made with all this loveliness put you well up in the count! 👍😁

I basically just stir fried with a light olive oil that has a higher temperature threshold and seasoned with kosher salt (a little too much), ground black pepper and an Italian seasoning blend of oregano, basil, thyme, marjoram…a little mushy but tasty. Less salt next time.

I’m liking the shimeji mushrooms too…don’t even know they’re there really…boosts niacin, magnesium, potassium, fiber…

I've read a lot of good things about the health benefits of mushrooms, but the BEST thing about them is the flavor! 😋 Sounds like a wonderful meal!

I’ve never been a fan of mushrooms, I’m slowly working my way into different varieties. Perhaps I’ll find a shiitake recipe and see what happens…definitely not ready for a portobello burger yet🤔
