OK -- this diet is driving me crazy. Not the diet I started out on six weeks ago...what's driving me crazy is the diet the gastroenterologist recommended to get me past the IBS. With virtually no dairy, no uncooked fresh fruits and vegetables, no cooked gasy foods like cauliflower or broccoli or Brussels sprouts, no high fat foods, etc, etc. I can't figure out what the heck to eat. Yesterday I was hungry the entire day from morning to night. Finally, last night, I rolled the dice and ate a big plate of ceviche at a very reliable Peruvian restaurant where we've been eating for years. Thank goodness I came home full and no digestive problems. But today I was struggling again. So I'm throwing caution to the winds and making zucchini lasagna for dinner -- zucchini slices instead of noodles and lactose free dairy. I just feel like if I don't eat something hot and tomatoey and cheesy I'll go mad. The worst that can happen is I'll have indigestion all night and I won't do it again.

Put a tablespoon of coconut oil over your veggies, or in your coffee or tea, it will help ward off hunger pangs. This is the good fat, not the unhealthy fat. Hopes that helps.

Well I can certainly see WHY it's driving you crazy. Fingers crossed for you that the zucchini lasagna satisfies the craving AND doesn't make you pay later today. BTW, that lasagna sounds amazing!

It's really easy to do the lasagna, Vickie, and you can do it with eggplant also. You just buy the big long fat zucchini so that you can create long, wide, thin slices to substitute for the noodles. Toss the zucchini with olive oil and Italian seasoning and grill until soft. Meanwhile, drain a container of lactose-free low fat cottage cheese in a strainer to lose some of the moisture, then put it through the blender with chopped parsley or fresh basil leaves. And... cut a half-pound package of Finlandia heavenly light lactose-free swiss cheese into thin strips. Arrange one layer of the zucchini in a lasagna pan. Spread half the cottage cheese mixture on it, then top with a half jar of good low-cal, low-sugar tomato-basil or tomato-spinach pasta sauce. Sprinkle with half the swiss cheese. Repeat with a second layer of everything. Bake at 350 for 40 minutes.

Oh thank you for typing all that out. Again, I can see why your current diet limitations are making you crazy. You're obviously a good and innovative cook who appreciates flavor! Hopefully the limitations will be lifted soon.

Thanks Vickie 5956-- I have a feeling I need to be more patient and not try to eat off the recommended diet for 4-5 weeks. I was doing ok when I was sticking to no dairy. Then I ate that delicious lasagna -- finally something rich and flavorful -- and I had a bad night last night as a result. Just have to be patient...

Hermoines Mom, at least there is an end in sight with the IBS diet. I agree that the discomfort simply can't be worth it.

Arg! I am so mad for you!!! I'm sorry you are still dealing with this. I can't even imagine how much it must stink to have so many limitations. And what's worse is if you break one of the rules, you have to pay for it physically! That lasagna does sound great though. My mouth is drooling reading this. We have also done like a cabbage lasagna, which was very tasty but really made us all quite gassy. lol

Thanks for the sympathy, Annie. Yes, I would imagine cabbage lasagna would be a bit on the gassy side. But try out the zucchini version. So long as you have no problems with dairy, you should be ok. Just be sure to us reduced fat dairy. Also it's critical to grill the zucchini first to get rid of some of the water.

Well no high-fat foods is crazy. I thought you were maybe put on the GAPS diet -- people with really bad GI issues use it. The first few days you only consume homemade bone broth which is a complete food (most of the proteins, good fats, vitamins and minerals you need). It also begins to heal the damage to your intestinal lining. But it looks like you can't really eat that because of the fat content. Good luck - maybe try some chili? Lean beef, beans, potatoes and tomato?

hah! -- no beans, no nuts, Marissastewart. But a good thought. I have a bunch of homemade turkey chili in the freezer just waiting for me to eat up. Tonight I'm going with whole grain pasta with tomatoes, spinach, zucchini, and mild turkey Italian sausage. I have fresh basil and oregano in the garden, so I should get plenty of flavor. I'll give this another week and try dairy again and see how it goes. I also got some more nectarines to cook, so I have some fruit. Oy.
