Doing a new journal entry about cookies since comments don't allow paragraphs.

So I used this recipe (based on lots of recipe reading on the web):

Almond Splenda Cookies

2 c. almond flour
1/2 c. splenda
1/2 c. butter
1 egg
1 tsp. vanilla extract
1 tsp. almond extract

Each cookie is cals: 37kcal | fat: 3.48g | carbs: 1.22g | fiber: 0.8 | prot: 0.92g So .42 net carbs

I made "cookies" in a teaspoon and it yielded 5 dozen. I don't know if you can see it in my cookbook as I didn't pick "share". They are definitely cookies but a bit, erm, healthy tasting when warm but after they cooled --- I liked them a lot!

i'm going to make your cookies - thanks for posting! i have several items i'll be baking but i'm so glad i'll have at least one i can chow on! i hope the dough isn't too soft - i want to put thru my cookie press.

It is pretty soft but might work with a stamp. I have these decorative measuring spoons that made perfect mounds kind of like small wedding cookies.
