I had smoked salmon for breakfast that I found at Zanotto's yesterday. It was expensive, but my goodness it surely tasted fabulous. And made me realize how tired I am of the same old tastes. I need to cook something complex but in plan. Maybe a curry or enchiladas. I've been meaning to try that enchilada pie again and see if I can get it right. Tonight though I think I am test-running the cauliflower salad for this weekend.

Cauliflower salad?? What goes in?? Gwebby made a great stir fry they other night with Thai flavors - coconut milk has like 1 carb per third cup so add lemon grass and...well you can ask her. It was simple once the chopping of all the veggies was done. I do understand the new tastes thing...on the other hand sticking to the same old stuff sure does speed up the food journaling!!!

I make a cauliflower and broccoli salad with Hellmans, vinegar, and Splenda...you can use the dressing as a slaw dressing, too.

oh man...hot german potato salad...vinegary goodness. I should try it with cauliflower.

I admit I'm a german potato salad person. I made a test batch last night with 15oz steamed cauliflower (about 1/3-1/4 head), 2 pieces of bacon crumbled, 2 tbsp mayo and 1 tbsp of mustard. For the weekend it will also have celery but I was out. And maybe almond bits too. Since I have to make it for 20+ (since 45 people are coming!) we shall see!! The Thai stir fry sounds good. I liked the coconut milk veg that she made for a potluck I was at recently. I don't actually like lemongrass or cilantro... so Thai isn't usually high on my list. I'd probably do it with coconut milk and a more Indian masala.

I have been eating wilted spinach. Fry bacon, add red wine vinegar and liquid sweetner to crumbled bacon and bacon drippings, bring to boil and pour over the fresh baby spinach leaves. MMM Serve immediately!

Mmmm...I made biryani last night, which I know is probably not in plan for you, but it was delicious! :) I've also recently begun experimenting with my own Thai and Indian curries... made a Thai sweet corn soup that was FABULOUS and very spicy :) For Atkins you'd probably need to be more careful about what's in some of them, but Indian and Asian curry pastes are about my favorite thing in the kitchen right now. Good luck!!
