I made some really yummy cookies last night. Coconut Almond Cookies made with coconut flour and almond butter. They turned out remarkably light and wonderful. So nice to find new things I can take to potlucks when people ask me to "bring a dessert". Next time I may add slivered almonds for a bit of crunch.
