I'm still really enjoying having eggs. My husband doesn't like them at all and doesn't want to be around whilst they are cooking. It is a treat to "have to eat eggs for my diet". This was my lunch today.
Sausage Florentine Benedict (basically a spinach eggs benedict with sausage instead of bread)
2 oz patty sausage (I like Jimmy Dean sage) - 1g 1/2 cup spinach - 1g (.54) 2 slices of tomato - 2g (1.57) 2 large poached eggs - 1g (.77) 2 Tbsp Hollandaise - 1g (.58)
Cook sausage patties. Wilt spinach in sausage grease. Poach eggs (I do it in water so no butter, but maybe I should do it in poaching cups and add butter to help with getting enough calories). Make microwave hollandaise such as http://www.cooks.com/rec/view/0,1729,151164-230201,00.html
Assemble - each sausage topped with tomato, spinach, egg and put 1 Tbsp of Hollandaise sauce on each. Enjoy!
Putting the ingredients one by one into FS gives 4.46 total carbs (3.66 net) but I rounded up to 6 following the boot camp guidelines.
