WOW!!! I finally put together that Spicy LC Lasagna, I mentioned earlier in the week, and it certainly didn't disappoint. Again, WOW! Mighty tasty, if I do say so myself, and considering it's only the second time I've made a lasagna, the first time being a few years ago; I did good. It has 1/3 of the carbs of a traditional lasagna, but lacked the riccotta cheese, and pesto, I would have prefered to add to my list of ingredients. A roasted chicken and spinach lasagna may be on the horizon in the future. :-)
