Hey Guys! Thought I would post a new journal while I wait for my icebag to melt on my foot. I have managed to add an avocado per day to my diet and I am finding that there are so many ways to enjoy them. I hate chewing and though I love salads all that roughage gets tiresome and I think longingly of those days when soft easy to chew and comforting carbs would be my dinner staple. Well, I think I found a solution, when the roof of my mouth gets raw and my jaws are aching, stuffed avocados are what is needed to let my mouth rest. Soft, creamy avocado halves laid out on a plate and mounded with a dip style stuffing that is oh so yummy. 5 oz of diced chicken, 3 oz baby bella mushrooms, two oz salsa, two oz of softened cream cheese. couple of jalapeno slices if you like it spicy. Stir vigorously until the cheese and salsa are a creamy red, toss in the rest of the ingredients until everything is incorporated. Spoon it over the tops of the avocados and mound it up. What you have there is approximately 1,000 calories of lovely fats, proteins and carbs in one creamy smooth mouth friendly meal! Use cheddar cheese squares like crackers to scoop up all of the overflow :)

Wow and the BP Coffee I had was probably not a good idea, it's 12:30 and I am still wide awake.

That sounds really good. Another recipe I stumbled across the other day is deviled eggs with avocado instead of mayo used to mix the "stuffing" mixture. Sounds like it would be another easy-to-eat item.

oh my, yes that does sound yummy...and soft. Soft is good right this moment. I know my mouth will get used to the roughage I probably have been cutting the veggies into too large chunks just to cut down on prep time, but a day or two of easy chewing would be good now and then.

Only 'ice' 10 minutes at a time. Otherwise you can do tissue demage. Hope you get some sleep. I am at my desk already as it is 8 in the morning :)

Thanks Schmetterling! That's usually all I leave it on each time, then pull it off an let it thaw for about 20 minutes. I made my own reusable soft ice packs from polypropylene glycol and water, leaves it icy cold and easy to wrap around an injury, I get lots of injuries in my day!

Oh, that sounds delish!!You describe food like a food editor on the food network...next career after the dancing one??! Super job on your drops..an inspiration to all of us, for sure :)

Sometimes I make an avocado omelette. You can fry the avocado first then add the eggs. It's an awesome breakfast for LCHF. Your recipe sounds amazing thank you for sharing

If you want some soft, comfort, food how about a low-carb cauliflower cheese (a favourite of mine)? Cauliflower, cream cheese, cream and cheddar cheese. My DH likes it with low carb sausages.

LOL Becca, I'm a woman of many talents!!!Apparently!!! Doobrie that sounds good too, I'm going to finish off my salad fixin's this week and then go get me some frozen type veggies that I can steam for next week, change it up a bit and let the mouth and jaws have a mini-vacay! Richard, I have never ever tried eating a hot avocado, never even knew they could be cooked. Things that have a lot of fat like that I tend to avoid heat with....years and years ago, I used to love "liver loaf" one day I decided to have a hot liver loaf and cheese sandwich and I tossed a slice of it in the skillet......it vanished..I was like WTH??? Anyway, good to know it's cookable. I have really just started eating them and experimenting with them, prior to Phils promotion of Avocados the only time I had ever eaten them was in Guacamole, I'm learning :)
