This was another clean out the fridge and pantry dinners again tonight. 3 medium raw red potatoes sliced, 1small calabasita (green gray Mexican squash), unpeeled and sliced, two small red and green Anaheim chilis or to taste chopped. These chilis are not hot at all, just very flavorful., half of a large yellow onion sliced, 10 compari tomatoes pulsed in the food processor. And, 8 ounces of Italian turkey sausage.

Cut sausage into little blocks and sautee till brown. Remove from pan. Sauté onion and garlic and peppers until lightly caramelized. Sauté potatoes and squash together till lightly caramelized and softened. Add all ingredients back into pan and add pulsed tomatoes. Simmer just a couple of minutes. Pour into casserole dish and top with one ounce of provolone cheese and bake in oven for about 15 minutes at 375-400 until cheese has melted and browned and you see small bubbles around the edges of casserole dish. I just seasoned with a light sprinkle of salt and pepper.

It turned out terrific. BF ate MORE than his fair share. He kept asking if it was a real recipe or something I made up and told me to write it down so I wouldn’t forget—— and I did forget that I was going to put cabbage in it but forgot. Obviously, you can add or subtract whatever veggies you have on hand. That being said, the fresh tomatoes made a terrific sauce without all the salt that is often in canned. The comparis came a nice sweet ending to each bite.

And for the member who commented about the potatoes not working for low carb people, LEAVE THEM OUT. Substitute something else, like cabbage. Come on, put some thought into this.

MattRide— for you I might suggest adding some jalapeño or Serrano chilies. I sometimes shop at a Mediterranean/middle Eastern/Asian/ Mexican market that sells a fire roasted pepper paste that you could easily add to this, especially if you use canned tomato. You would get your wish on the additional heat. It does come in medium and hot. I can’t say that I have ever seen mild.. let me know if you try it and what adaptations you might have made. Experimenting with food is fun.
