XryRn— although I really believe in a LOWER carb diet I also think it is important to look at the foods and see what NUTRITIONAL VALUE they might bring to the table. I Definitely do not believe in completely eliminating entire food groups. Smaller amounts of a wide variety of foods helps ensure that you are getting the nutrition that you need.

Thank you for your vote of confidence Gastropoda. Even canned pumpkin purée is just fine. Squash of all kinds are nutritional powerhouses. Eating small amounts of lots of different things helps keep your nutritional needs meet and it is a sustainable way of eating.

I'm a hard shell squash fan, especially in cooler weather. We go through a lot of acorn, butternut and spaghetti squash but not pumpkin. Yet.

I am going to buy a small pumpkin squash since at this time in this place they are under $3. Then are also pumpkin seeds and at one time - I used to dry and bake them with a sprinkle of salt - when the kids were little.
