I was hungry for some type of Chinese noodle soup and wasn’t into going out to get anything, but I did have a container of that Raman soup that I sometimes use the noodles from for another purpose. I discarded the soy packet (way too much salt) and made it as directed. I sautéed some green cabbage and zucchini and a couple of cherry tomatoes and a few slices of sun dried tomatoes and then addd it to the noodles. Boy did it hit the spot. Couldn’t believe how good it was. The key was caramelizing the vegetables and using the sun dried tomatoes. Really gave the broth a rich flavor and it was just barely “soupy”. Although a lite dinner it was about 450 calories and probably 60 carbs. But for tonight that was ok. Now how to log this. The great American short story— fiction.
