We covered a lot in the nutrition class last night. After concentrating on counting carbs for 2 weeks, they remind us that we have to watch protein and fat also. I made today's lunch last night. Weighing the meat portion and recording all the ingredients. I had all the carb choices and protein portions within the recommended ranges, but even though my glucose was in range before lunch, it was very high after lunch. I'm very disappointed. I had a very tasty shake-n-bake chicken breast for dinner with a salad and a vinegar and oil dressing. Very satisfying dinner, but the carbs fall below the recommended range. Should I eat more carbs to reach the minimum recommendation? I guess I should if I am going to follow the program the dietitian has created for me.
