Made a vegan omelette for breakfast today. I make it with Ener-G Egg Replacer, add some cornmeal and turmeric for color, and put wheat germ and baking powder for body. Then I add water until it's a little thicker than eggs would be. Sometimes I put in mashed potato flakes for lightness, but didn't do that this morning. I fill with whatever veggies, and herbs from my garden (today I put in basil, mint, oregano, thyme, mexican mint marigold, lamb's quarters, sage--wanted to put in sorrel but the heat is almost killing it so there's not enough plant to harvest). I also make a vegan "queso" dip by mixing together salsa and nutritional yeast.
