Dinner - 608 total for day is 1334
Made Tex Mex Chicken tacos -
Filling:
1 can chunk chicken, shredded
1/2 cup of whole kernel corn
1/2 cup tomatos and green chilies
1/2 cup black beans
2 tbsp ff sour cream
1 tbsp of cumin (may need more)
Serve on whole wheat tortilla
Topping - Lettuce, taco sauce & ff sour cream (1/2 serving) [per tortilla]
Total = 304
Filling makes 4 servings.

total day calories = 1791
1.16.11 - Made breakfast burritos. Recipe ended up being 2 servings. Ate one with a tortilla and the rest of the mixture on my plate. EXTREMELY filling!!!Total calories: 597 calories! Really high, but learned that one burrito & leftover mixture will be JUST fine!! :)
