I have always been a little overweight, but my jobs (waiting tables) helped keep it down to a reasonable amount. Then I got a desk job and added about 30 pounds over the course of a year.
Working hard to get down to 200 from 258!

Eggplant Caprese Bake
Similar to an eggplant pizza but with no sauce, and similar to a caprese but with eggplant, it's the best of both worlds.

Gaining weight
Thanks to both of you. I think what has bothered me is more that I've had consistent weightloss through the first three weeks of my diet and then in the last 4 to 5 days it's been very up and down. I know that a plateau is common, that must be what's going on with me now.
Not discouraged! Onwards!

Gaining weight
I'm a month into my diet. At one point I'd lost 16 pounds. I haven't done anything differently than I'd done the first 3 1/2 weeks but now I've gained 4 pounds back. Any idea as to why?

An easy way to add calories is through a handful of nuts or seeds. They have lots of heart healthy fats and a good serving of protein. They are high calorie so it doesn't take much to boost your calorie intake.
To be honest, when you have a LOT to lose (50+ pounds) you can get away with lower calorie intakes because your body knows it has extra fuel (stored fat) to keep itself going. However, the farther you get the more a low calorie intake becomes a problem. That's why I suggest you start at about 2000. If that stops working, you can always lower it as needed. If your intake is already too low it doesn't leave you anywhere to go.
I'm definitely in that category. I need to lost about 50 pounds (I started at 258, trying to get down to 200... although 220 would be great).
Thanks for all the suggestions. I'll definitely go buy some nuts to try to add a couple hundred calories per day.

Thanks Divided by... I am male. With eating healthier, low calorie food, I'm finding it hard to get to 2000. Most of the time my sweet spot has been between 1300 and 1700 calories. What will happen if I stay in that range?
By the way, this is a very strange problem for me to have, having to think about eating more.

I have the opposite issue. I've been eating 1300 calories or so (I'm just finding out... I wasn't counting before) and the RDI on here says I should be eating about 2600. I'm aiming more towards 2000. Does that sound right to everyone or am I doing something that will hurt me in the long run? I'm new to this.
