Oh, and if you meant a local community (i.e. your physical neighborhood), you can just disregard the uncertainty and the item about the box to check and add as many weigh-ins as needed.

I think... if you click on the "weigh in" link and change the date on the calendar to whatever date you had actually started and then make sure you have the box checked that shows that you want to have this counted for the challenge, it should work. Not 100% sure though. Sorry I can't be more helpful...
