Egg fried riced cauliflower with grilled chicken breast. 430 cals.

Recipe :
300g Riced cauliflower
1.5 tbsp Sambal belacan**
1 tbsp oil
1 Egg &
Seasoning

*It shouldn't be soggy that's where the egg coming in to play and avoid adding water. Chop or crush the cauliflower by hand if possible. Cook for at least 20 minutes (medium heat) or until everything is nice and crumbly.

**Sambal belacan is somewhat similar to salsa in paste form with shrimp paste and lots of bird chilli. I made mine with added fish sauce. I think you can get away with using salsa.

***You can be creative with your ingredients. Mine is very basic.

Instructions:
1. Heat the oil
2. Sauté the sambal
3. Add the cauliflower and mix well.
4. Put the egg in. Let it cook half way and mix.
5. Seasoned to taste. Enjoy😋

Myckee1, I understand. Read that quite a number of people can't get use to the taste. As for me I love it the first time I tried it. Haven't had rice for month prior after all😅

This is a very tasty combo Ginome. I have been using riced cauliflower from the store. It's easier, just watch out for the sodium levels in different packages. :-)

Hi breezy. I love this as it's the only alternative to rice that I know of. I would made it everyday if the cauliflower is not too pricey 😅. I'm surprised they actually sell it there. Nowhere to be gound here accept for the frozen one maybe.

Ginome, Fresh vegetables are easy to find here in Eastern New England, USA. Farming goes on even in the winter. I've only been purchasing the flash frozen bc I'm too lazy to go to the 'Veggie Market' every day 😆 I'm also a savvy shopper.

Breezy, farming in winter? Wow. Indoors? Fresh veggies are easy to find here too since we only have summer all year round. Since I do my groceries weekly I tend to realized the price change from one supermarket yo the other and I don't think it has anything to do with demand and supply😅

Aphoebe, that sounds nice. Probably need a mayo to hold everything together because this one is way too crumbly 😅. I made a burrito like thingy for dinner last night. Just that I used omelette as a wrapper🤣. It was delicious 😋
