There's more than one way to make a salad. :) Somewhere between a cole slaw and a broccoli salad, with a lighter twist. Fresh veggies chopped small, fresh cilantro, a little mayo, splash of vinegar, celery salt and pepper.

Have protein instead of saturated fat in your dressing. Use nonfat greek yogurt instead.

LaShrebeka, if you like the broccoli taste that way many of the stores sell what they call "broccoli slaw" that I've become addicted to. It's the stalks of the broccoli and carrots and some cabbage and is crunchy and pretty nummy either on it's own or added to salads. As an oriental twist in the past I used to dump cashews in my slaw with the honey and I'm thinking I might go back to this with a sesame oil, broccoli slaw, bok choy combo with maybe some jicama or as Jipper suggested yogurt might be a thought 😉even though the fat isn't a problem could use a dannon greek yogurt maybe to add some sweet to a sauce without the honey.

Awesome ideas, guys. :) It was so fresh and yummy. It'd be really amazing on a sunny afternoon. smprowett, yes, broccoli slaw! I know what you're talking about. I'm not quite as worried about fat as I am about sugar - I'd wanna be sure there weren't too many hidden carbs. But yes, cashews or sunflower seeds or something like that. So many options. :)

One of my favourite summer meals is tuna salad. As in mix the ranch into the canned of refrigerated tuna with some relish and dump it into a salad and stir it up really good. No carbs really with no bread, just what's in the salad or relish. Great on a hot day!

I love salads; but i cannot stand cilantro. It's one of those things either you love (like my daughter does) or hate (like i do)! This one looks very good, but i would have to pass on the cilantro.
