We eat a lot of legumes. I cook a big pot with just onion and salt and then divide them in tuppers and put them. They make quick and delicious salads, soups, stews and dips, even fritters!

Spinach salad--2oz shredded chicken, 2cups spinach, 6 croutons (broken in thirds), 1/2 Tbsp imitation bacon bits (I don't eat pork), 2 tsp grated cheese, 2Tbsp dressing (I like Girard's Champaign). I also sometimes have a Gardein patty on a Hawaiian bun. Snack on green grapes often.

I eat a lot of bean burritos. Basically just a fiber wrap or two, beans, lettuce, a little low-fat cheese, and hot sauce.

Dinner leftovers are my go to. Make a big breakfast of eggs before work and then heat up a plate of leftovers for lunch

I eat ground turkey with black beans, onions, and rice with spices. Or I’ll eat cottage cheese and unsweetened apple sauce. Or peanut butter and celery.

Every week I make a bag of dry beans in the instant pot so I have them in the fridge for salads, chili or just straight with 2% cottage cheese. Weekly, I also simmer a 28 oz can of diced tomatoes with a bag of cut okra, fresh garlic and red pepper flakes and flavor it either Italian (basil/oregano), Tex Mex (chili powder, cumin) or Indian (Graham masala). that has about 65 calories a cup and can be a sauce, a side, a chili base or, again, with cottage cheese. I keep a store of Rosen's thin sliced rye at 50 cals a slice on hand and make sandwiches with boars head turkey breast. I often get a pineapple, chunk it and keep it in the fridge at 74 cals a cup. I, too, eat a lot of eggs that can be mixed and matched with any or all of the above. Happy grazing.

I will buy those tuna packets. 5 oz. quick abs easy. Or cook a protein and portion out doe like 2-3 days. Bean burgers are quick too. Quick microwave and done.

I rely heavily on eggs. There are so many ways to fix them in keto. I'm allergic to beef, so pork and chicken are my meat standbys. I keep tuna in the pantry all the time, but don't eat other fish very frequently, even though I know it is good for me. Ground turkey, or turkey patties instead of hamburger, several kinds of cheese, and cottage cheese appear frequently in my meals.
