Damage control any ideas on how to help my daughter?
First, I just have to say that I think the teacher was wrong to do this. And although I am not defending the teacher, I do have some thoughts about it.

Considering that I am 34 and have been overweight pretty much my entire life, I've always had the "fat thoughts" - things like not being happy with my weight or my body, self-esteem/confidence, stuff like that. You eat a meal and then 30 minutes later you're wondering "What's for dinner?" or what can I snack on, etc. and then you stress because you're eating too much. Eh, vicious cycle. In general, it's thinking all about things like this. And as most of you know, we keep a lot of it inside.

However, some people that have always been thin, don't understand about all of these internal thoughts/conversations in our own heads. They don't understand how all of this can really consume our thoughts all day long. They don't understand that as much as we long to be thin, it's not always as simple as eating healthier or just exercising more. Weight loss is probably 90% mental and 10% everything else. Sometimes, people just don't get it.

I guess what I'm getting at is maybe, just maybe, the teacher really did not consider how big of a mental affect this project would have on the students, your daughter in particular, being as she was the largest in the class.

Whether it is regarding weight loss issues or just about anything else for that matter, sometimes we don't "get it" until something happens that we can really relate to. Then it's like, OMG!!! I GET IT NOW! I know it may seem silly, but everyone sees the world with the different eyes.

The best outcome here isn't to flog the teacher and it certainly isn't to force your daughter to go on a diet. It would be great if your daughter would be courageous enough to go with you to speak to the teacher so she can let the teacher know just how bad it made her feel. If the project the teacher was doing has a good message and still can be used to teach the students, maybe this will help the teacher to reconstruct the teaching plan so as to get the point across without using this sort of demonstration. Find a constructive solution to the problem.

If your daughter is ready to change, do some things together with her. Maybe it's time for the whole family (if there are others in your household) to start eating healthier, not just you and her. See if there are any local healthy cooking classes that you two can take together. If there are any local farmers' markets, go there weekly and pick out fresh fruits and veggies, and maybe start planning your own garden for next spring/summer if you can. The more active your daughter is in the lifestyle change process, the more apt she is to stick with it in the long run. Even if the two of you can just start walking, it will do you loads of good. If you enjoy reading, check out "The Spirited Walker" and "Healing Walks for Hard Times" by Carolyn Scott Kortge. I recently went to a book party where she read some passages and I am really enjoying the books. You can read more about Carolyn and her books here.

I hope with all of the suggestions that everyone has posted, that you do find something that with work for you and your daughter.

Leg Cramping - Potassium...?
Although bananas do have potassium, apricots (fresh) and avocados have more. I believe spinach is also high in potassium. I used to get leg cramps a lot, even though I was taking a potassium supplement along with a diuretic and my aunt suggested that I should take a calcium w/magnesium supplement as well. I started taking them and the leg cramps went away within a few days! So, you might see if that helps too.
