Hi everybody! The cauliflower potato salad is an absolute win. No matter how you like your potato salad, just steaming cauliflower and using that instead of boiled potatoes works perfectly.

I also make fauxtato salad from steamed kohlrabi cubes and/or the large stalks from my homegrown brocolli (peeled and cubed). When you think about it, potatoes don't have all that much flavor. . . more of a vehicle for delivering the salad dressing to your taste buds . . . so any mild flavored veggie should work. ;-) I've read about using steamed radishes in place of the spuds, but haven't tried that yet.
