This is amazing! I found it at the right time, too. I'm in a co-op and have tons of cottage cheese and zucchini this week. My bf asked what the green was after he scarfed it down and didn't flinch when I told him there was cc in there. My mom even asked me for the recipe. ? Thank you, thank you. I too plan to try it with less butter next time.

This recipe is fantastic! A must try! Though, with all that butter in there, I'm thinking it could be done a little healthier with a bit of tweaking. With all the zucchini coming up in my garden, I'll have lots of time to experiment.
