Super easy mini blueberry muffins using pancake mix and yogurt.
Ingredients
Directions
- Preheat oven to 400 °F (205 °C). Spray mini muffin pan with baking spray.
- Mix together all dry ingredients in a bowl.
- Mix in wet ingredients except for blueberries.
- Gently fold in blueberries.
- Spoon 1 rounded tablespoon of mixture into each cup of the muffin pan.
- Bake 8-10 minutes or when a toothpick comes out clean and top is golden. If using a standard muffin pan, bake 18-20 minutes.
