An easy Fat Smash Phase 1 friendly soup that I made up tonight because I was sooo hungry.
Ingredients
Directions
- Combine all ingredients except rice in pot.
- Boil uncovered for 30 minutes or until carrots are softened.
- Stir in rice.
- Enjoy.

This would appear appropriate for for my low fat + low calorie diet but need to ask the question - what is the quantity of a serving? Have I missed this somewhere.

I find it much better made from scratch because then you know EXACTLY what is in the soup!! Great recipe and very delicious!!

This is ok, but even easier - buy a can of vegetarian vegetable soup (watch the ingredients and sodium on the label) and mix it with Uncle Ben's Ready Rice. I divide that into two meals and it is great and EASY.
