Vege & Black Bean Coleslaw
Crisp and fresh vegetable slaw with black beans.
Ingredients
Directions
- Shred or chop all vegetables and mix in a large bowl.
- Drain and rinse black beans, add to vegetables.
- Blend vinegar and olive oil and add to salad. Mix well.
- Serve fresh or keeps well refrigerated for several days.

Reviews
Needs some seasoning, so I also incorporated salt/pepper and some chopped jalapenos and bell pepper.
The dressing of vinegar and EVOO was simple, yet delicious.
