Turkey Bacon and Vegetable Frittata
A breakfast or brunch staple with some healthier substitutions.

Directions
- Cook bacon, set aside. Grate zucchini.
- Sauté onions in oil, add shredded zucchini and spinach and cook until wilted. Pour into 8" pan.
- Mix eggs, egg whites, salt, pepper, and hot sauce and pour over vegetable mixture.
- Crumble bacon and sprinkle over entire pan.
- Cook for 40 minutes at 350 °F (175 °C).
