Directions
- Cover the bottom of a 13"x9" pan or something similar in dimension with a thin layer of salsa.
- Fill each tortilla with the spinach, soy cheese, tomatoes, onions, and mushrooms and place them in the pan.
- Cover the enchiladas with another layer of salsa or enchilada sauce.
- Let the enchiladas bake for 35 minutes at 350° F (175° C). Take the enchiladas out and finish putting the rest of your soy cheese on top and bake for an additional 10 minutes.
- Let the enchiladas rest for about 10 minutes, then enjoy it with a nice crisp salad on the side.
