Spicy Spinach and Shallots
Spinach with a kick.
Ingredients
Directions
- Spray a small pot with cooking spray.
- Chop shallots and then sauté them.
- Take a plop (as much you like) of the mustard and mix it with the onions.
- Add some malt vinegar, to taste, to the mustard and onion mixture.
- Drop in the washed spinach. Stir around pan until the spinach is wilted.

This recipe was simple and delicious. I am thankful that you posed this. I added some garlic and onion powder to it. I wasn't looking at the recipe and forgot about the vinegar. I had to share this recipe with my mother.
