Directions
- Microwave rice and set aside.
- Mix salt, pepper and oil with peas, microwave.
- Plate a cup of brown rice and layer about 1/2 cup of the peas mixture and top off with chilled spicy tomatoes (such as Rotel).
- Note: field peas and snaps are pretty much black-eyed peas, but with green beans mixed in.
