Cold vegetarian spring rolls, wrapped in rice paper rather than battered and deep fried.
Ingredients
Directions
- Cut cucumber into 2'' long skinny sticks. Remove stems from mint and basil sprigs.
- Take small handful of vermicelli noodles and place in bowl of boiling water until soft. Drain.
- In a large shallow bowl, fill with two inches of boiling water. Dip rice paper in bowl, allowing it to sit (no folds or wrinkles) until flimsy and soft.
- Move wet rice paper to large place and dab off excess water with tea towel.
- In the centre of the circle, place pinches of matchstick carrots, cooked vermicelli, mint, basil, cucumber and sprinkle everything with sesame seeds.
- Wrap everything up like a burrito, and voila! Rice rolls. Dip in spicy peanut sauce.

These are delicious, you just need to give them your own twist! I usually add fake "chicken" and a little bit of couscous. And for sauce you could simply go for freshly squeezed lemon juice with a little salt.

This sounds almost like some treats a Filipino family used to make for neighbors when I was a kid, only they wrapped it in banana leaves and it had small pieces of bbq pork. I have to try this to see if it tastes like those tasty treats.

mix hoisin sauce with chunky peanut butter and add sugar to taste. Also add water as needed to thin sauce. put over heat until hot and serve. Add hot chili pepper for spice. This is a Vietnamese recipe. You can also add boiled shrimp & hard boiled eggs & boiled pork loin to the roll for non vegetarians. Enjoy!
