Easy summer muffins with fresh raspberries.
Ingredients
Directions
- Blend the eggs, vanilla, milk, sugar and applesauce in a medium bowl.
- Mix the flours and salt in a large bowl. Remove about 1 tablespoon of the flour mix and use it to flour the raspberries.
- Make a well in the flour and pour in the egg mixture.
- Mix until just moistened.
- Fill each muffin cup about 1/3 full and add raspberries to each. Fill another 1/3.
- Bake at 400 °F (200 °C) for about 17 - 18 minutes.

The cholesterol value is way off... For 12 muffins 4 large eggs will equal roughly 70 mg of cholesterol per muffin.

Trying to understand what went wrong... Tasted really good once they came out of the oven. Once they cooled they are hard as rocks.. They were in the oven for only 15 minutes. I will be making them again today..

Yum! These are really dense and hearty yet just a touch sweet from the raspberries. I used nonfat plain yogurt instead of applesauce. My only problem was that they totally stuck to the muffin liners. Next time I will skip the liners and butter the tin well instead. I might also try this with strawberries as well.
